Ingredients

  • 250 g - okra
  • 5 - green chillies
  • For stuffing:
  • 2 tbsp - gram flour
  • 1 /2 tsp - turmeric powder
  • 1/2 tsp - red chilli powder
  • 1/2 tsp - garam masala
  • 1/2 tsp - fennel seeds
  • 1/2 tsp - dried mango powder
  • 1/2 tsp - anardana powder
  • To taste - salt
  • 1 tbsp - vegetable oil
  • For tempering:
  • 1/2 tsp - cumin seeds
  • 1/2 tsp - fennel seeds
  • 1/2 tsp - nigella seeds
  • 2 - green chillies, chopped
  • 2 tbsp - vegetable oil

How to Make Rajasthani Bhindi

  • Wash okra and dry with a kitchen towel.
  • In a bowl, mix all the ingredients for stuffing, stirring fast to avoid lumps.
  • Cut the heads of the okra and slit it lengthwise, up to the tail.
  • Do the same with the green chillies also.
  • Fill the slit okra and chillies with the stuffing mixture.
  • Heat oil in a wok.
  • Add cumin, nigella, fennel seeds and the chopped green chillies.
  • Now add the stuffed okra and chillies and allow to cook for 10 minutes on simmer.
  • Stir and cook on high heat or 2 minutes.
  • Remove from heat.
  • Serve with chapattis or rice.
