  • 1 litre vegetable stock
  • 800 gms. red tomato
  • 100 gms. carrot
  • 80 gms. red onion
  • 10 gms. garlic
  • 2 ml. olive oil
  • 10 gms. basil
  • 300 gms. whole spelt bread, diced into medium sized croutons
  • 200 gms. honey
  • 100 gms. yellow cherry tomatoes

How to Make Rehana`s Cream of Tomato Soup

  • Cook red tomatoes, garlic, onion, carrot and oil in the vegetable stock.
  • Blend and strain.
  • Season with salt and a little honey.
  • Cut the yellow cherry tomatoes into cubes and add to the soup.
  • Garnish with short braised broccolini, basil and croutons.
