Ingredients

  • Brinjal - 1, large
  • 1 - big, finely chopped Onion
  • 1 - big, finely chopped Tomato
  • 1 tsp - Ginger-garlic paste
  • Chilli powder - 1 tbsp
  • Turmeric powder - 1 tsp
  • Garam Masala - 1 tbsp
  • 1 tsp - Tomato sauce
  • Tandoori powder (optional) - 1 tbsp
  • 1 tsp - Cream
  • Jeera - 1 tsp
  • Coriander leaves - 1/2 cup, chopped
  • Salt to taste.
  • How to Make Roasted Brinjal Curry:

    1. Roast and mash the brinjal.
    2. Heat oil in pan, saute the jeera and add the onion and saute until pink.
    3. Now add the tomatoes to it, stir until the onion and tomatoes mix and form a smooth gravy.
    4. Add the ginger-garlic paste and stir it.
    5. Lower the flame and add chilli powder, turmeric powder, tandoori powder and garam masala. Stir it again and add salt to taste.
    6. Now add the tomato sauce and then the roasted brinjal to it.
    7. Mix well. Now add the cream on the top.
    8. Garnish with coriander leaves.
    9. Serve hot with rotis.
