Ingredients

  • Brinjal - 1, large
  • 1 - big, finely chopped onion
  • 1 - big, finely chopped Tomato
  • 1 tsp - Ginger-garlic paste
  • Chilli powder - 1 tbsp
  • Turmeric powder - 1 tsp
  • Garam masala - 1 tbsp
  • 1 tsp - Tomato sauce
  • Tandoori powder (optional) - 1 tbsp
  • 1 tsp - cream
  • Jeera - 1 tsp
  • Coriander leaves - 1/2 cup, chopped
  • Salt to taste.

How to Make Roasted Brinjal Curry

  • Roast and mash the brinjal.
  • Heat oil in pan, saute the jeera and add the onion and saute until pink.
  • Now add the tomatoes to it, stir until the onion and tomatoes mix and form a smooth gravy.
  • Add the ginger-garlic paste and stir it.
  • Lower the flame and add chilli powder, turmeric powder, tandoori powder and garam masala. Stir it again and add salt to taste.
  • Now add the tomato sauce and then the roasted brinjal to it.
  • Mix well. Now add the cream on the top.
  • Garnish with coriander leaves.
  • Serve hot with rotis.
