Ingredients

  • 2 cups - sago granules
  • Salt to taste
  • Oil for greasing
  • Large steamer
  • Small round saariya plates or moulds, approx. 1 doz.

How to Make Saariya or Saria

  • Wash sago, drain off excess water, transfer to a large bowl.
  • Sprinkle some water over granules, keep aside, covered, for 30 mins.
  • Loosen each grain gently by running between fingers.
  • Sprinkle some more water and keep aside.
  • Repeat procedure, till granules are well soaked.
  • Sprinkle salt, mix well.
  • Grease all moulds, put some granules of sago in each.
  • Put steamer to boil, and steam for 7-8 minutes, till granules are starchy, and cling together.
  • Remove moulds, carefully invert over a sterile plastic sheet, for drying in direct sun.
  • When fully dried, cool and store in airtight container.
