Ingredients

  • 250 g - ghee
  • 50 g - sugar
  • 250 g - gram flour (besan)
  • 1 tsp - cardamom powder
  • ¼ tsp - essence of saffron
  • 25 g - sliced pistachios and almonds
  • a few drops - yellow colour
  • silver or golden foil

How to Make Saffron flavored Mysore Pak

  • Put one cup water in sugar and prepare a syrup of one thread consistency.
  • Fry gram flour in 100 gms. ghee to a rich golden colour.
  • Add the nuts, sugar syrup, cardamoms and a few drops of yellow colouring and mix well.
  • Heat remaining ghee to smoking point and add it gradually into the mixture, stirring all the time.
  • When the mixture is well blended and the ghee begins to appear on the surface, mix in the essence, remove from fire and put in a greased thali.
  • Cover with foil and cut into squares while still warm. Keep aside to set.
