  • 450 g - minced, cooked mutton/chicken
  • 1 kg - potatoes, peeled
  • 100 g - butter
  • 2 - medium eggs
  • 50 g - peanuts, chopped
  • 1 - onion
  • pepper to taste
  • salt to taste

How to Make Savoury Potato Nests

  • Cook the potatoes in lightly salted water until tender.
  • Drain and mash well with butter.
  • Beat in the eggs and seasoning.
  • Put the potato mixture into a piping bag fitted with a star nozzle.
  • Pipe out four flat circles about 10 cm diameter on a baking tray lined with non-stick paper.
  • Pipe another around the edges to make nests.
  • Divide the mince mixture into each nest.
  • Garnish with peanuts and parsley.
  • If serving immediately, brush the potato nest with a little beaten egg and brown under the grill.
  • Serve hot with salad.
