  • 1 kg - sweet potato, peeled and cut into 3 cm pieces
  • 5 cups - chicken stock
  • 1 - onion finely chopped
  • 2 cloves - garlic, crushed
  • 2 tbsp - grated ginger
  • 2 tsp - garam masala
  • 1 cup - buttermilk
  • Chilli oil to taste
  • Olive oil to taste
  • 1/2 cup - water

How to Make Savoury Sweet-Potato Soup

  • Peel and boil the sweet potato.
  • Heat 1 tbsp of olive oil in a large saucepan.
  • Add onion, garlic and ginger and cook over low heat until onion is soft.
  • Add boiled sweet potato and garam masala and cook for 2 mins.
  • Add water. Bring to a boil and simmer for 5 mins.
  • Process in a food processor until smooth, then return to the saucepan.
  • Stir in buttermilk, chilli oil and heat through.
  • Serve sprinkled with coriander leaves.
