  • 2 cups - leftover biryani or pulao cold
  • 1 cup - sesame seeds (white or brown)
  • 2 tbsp - semolina
  • 2 tbsp - Corn flour
  • 3 - cheese cubes
  • 1/2 cup - boiling water
  • Oil to deep fry
  • salt to taste
  • How to Make Sesame Pakoras from Leftover Pulao:

    1. Remove any whole bay leaves, cloves, etc. from biryani.
    2. Pulse it in a mixie till rice is crushed a little.
    3. In a heavy frying pan, dry roast semolina, stirring continuously.
    4. When it turns aromatic, add boiling water.
    5. Stir till the mixture is cooked.
    6. Add more water if required to make a soft mixture.
    7. Add crushed biryani, salt and spices if required after checking taste.
    8. Add corn flour, cool mixture and form into ping pong ball sized rounds.
    9. Flatten with palms, place a small piece of cheese cube in the centre.
    10. Bring up sides, shape again into a ball, with cheese tucked inside.
    11. Heat oil in a frying pan.
    12. Roll each ball in a plate of sesame seeds.
    13. Press seeds in place by enclosing with palms.
    14. Deep fry till golden and crisp.
    15. Cut into halves with a sharp knife.
    16. Serve hot with ketchup, chutney etc.
