Ingredients

  • Raw Rice - 2 cups
  • Black gram (urad) dal - 1/2 cup
  • Fenugreek - 1/2 tsp
  • Beaten Rice (Poha), thick - 1/2 cup
  • or
  • Beaten Rice (Poha), thin - 1 cup
  • salt to taste
  • Cooking soda - 1/2 tsp

How to Make Set Dosai

  • Wash and soak rice, urad dal and fenugreek together for 3-4 hours.
  • Soak beaten rice separately for 15 mins.
  • Grind rice and poha separately into a smooth paste.
  • Mix them both, add salt and water to form a batter similar to that of the dosai.
  • Allow the batter to ferment overnight.
  • Add soda to the batter just before making the dosa.
  • Heat a thick tawa and coat it lightly with oil.
  • Pour 1/2 cup of batter on it and spread to form a thick dosa.
  • Cover and cook on medium heat till it is full of tiny holes, white and fluffy on top, golden brown underneath.
  • Ease it off the tawa and serve with the white side on top along with chutney, kurma or a non-vegetarian curry.
