Raw rice - 2 cups
Black gram (urad) dal - 1/2 cup
Fenugreek - 1/2 tsp
Beaten rice (Poha), thick - 1/2 cup
Beaten rice (Poha), thin - 1 cup
salt to taste
Cooking soda - 1/2 tsp
How to Make Set Dosai
Wash and soak rice, urad dal and fenugreek together for 3-4 hours.
Soak beaten rice separately for 15 mins.
Grind rice and poha separately into a smooth paste.
Mix them both, add salt and water to form a batter similar to that of the dosai.
Allow the batter to ferment overnight.
Add soda to the batter just before making the dosa.
Heat a thick tawa and coat it lightly with oil.
Pour 1/2 cup of batter on it and spread to form a thick dosa.
Cover and cook on medium heat till it is full of tiny holes, white and fluffy on top, golden brown underneath.
Ease it off the tawa and serve with the white side on top along with chutney, kurma or a non-vegetarian curry.
