Ingredients

  • Besan - 2 cups
  • Ghee - 2 tbsp
  • Sweet khova - 400 g
  • Icing Sugar - 2 cups
  • Condensed Milk - 3 tbsp
  • Ghee or oil, to deep fry
  • Rose essence
  • salt

How to Make Sev Burfi

  • Mix besan with ghee and a pinch of salt. Add water to make a stiff paste.
  • Press through a sev mould into moderately hot oil or ghee and deep fry till crisp.
  • Remove from oil and reserve.
  • Beat icing sugar with condensed milk to form a smooth paste.
  • Add sweet khova and beat well. Then, beat in a few drops of rose essence.
  • Add the sev little by little into the paste mixing gently till it forms a firm lump.
  • Grease a tray and press the mixture into it. Let it dry for an hour.
  • Cut into pieces and store.
