Ingredients

  • 1 cup - evaporated milk
  • 1/2 kg - single mutton chops
  • 1 medium sized onion, chopped finely
  • 2 large potatoes, boiled and coarsely mashed
  • 100 gms - grated cheese
  • 1 egg, well beaten
  • 4 green chillies, finely chopped
  • 1 tsp - garam masala
  • 1 small bunch green coriander, finely chopped
  • 2 lemon (juice)
  • breadcrumbs or semolina as required
  • oil for frying
  • 1.5 tsp - salt

How to Make Shahi Cheese Mutton Chops

  • Boil the mutton chops/ribs along with the onion and the evaporated milk until the meat starts separating from the bones and no liquid is left.
  • Remove all the meat from the bones and chop the meat coarsely.
  • Keep 12 bones aside.
  • Then mix the meat with the potatoes, green chillies, coriander, lemon juice.
  • Add garam masala, salt and cheese.
  • Divide the mixture into 12 portions.
  • Remove the top joint from the bones leaving a clean rib behind.
  • Wrap the meat and potatoes to mixture around the top of each rib/chop and shape into an oblong, leaving about 3 cm of the bone free.
  • Dip each rib in the well beaten egg and coat with breadcrumbs or semolina.
  • Dry fry till brown in oil on a low gas flame.
  • Wrap the base portion of the bone in 3 cm x 2 cm cooking foil.
  • Serve hot with chutney or sauce.
