1 cup - evaporated Milk

1/2 kg - single Mutton chops

1 medium sized onion, chopped finely

2 large potatoes, boiled and coarsely mashed

100 gms - grated cheese

1 egg, well beaten

4 green chillies, finely chopped

1 tsp - Garam Masala

1 small bunch green coriander, finely chopped

2 Lemon (juice)

breadcrumbs or semolina as required

oil for frying

1.5 tsp - salt


  1. Boil the mutton chops/ribs along with the onion and the evaporated milk until the meat starts separating from the bones and no liquid is left.
  2. Remove all the meat from the bones and chop the meat coarsely.
  3. Keep 12 bones aside.
  4. Then mix the meat with the potatoes, green chillies, coriander, lemon juice.
  5. Add garam masala, salt and cheese.
  6. Divide the mixture into 12 portions.
  7. Remove the top joint from the bones leaving a clean rib behind.
  8. Wrap the meat and potatoes to mixture around the top of each rib/chop and shape into an oblong, leaving about 3 cm of the bone free.
  9. Dip each rib in the well beaten egg and coat with breadcrumbs or semolina.
  10. Dry fry till brown in oil on a low gas flame.
  11. Wrap the base portion of the bone in 3 cm x 2 cm cooking foil.
  12. Serve hot with chutney or sauce.
