  • 6 hard boiled eggs
  • 4 tbsp - cooked shrimps
  • 1.5 cups - mayonnaise
  • 2 tbsp - grated Onion
  • 1 tbsp - minced Coriander leaves
  • thin strips - Capsicum
  • salt and pepper to taste

How to Make Shrimp Stuffed Eggs

  • Slice eggs in half, lengthwise.
  • Remove the yolks and mash well along with the mayonnaise, onion, coriander leaves, salt and pepper.
  • Add the shrimps and blend well. Arrange egg whites on a bed of lettuce.
  • Fill each hollow with the shrimp and egg yolk mixture and garnish with the strips of capsicum.
