Ingredients

  • 2 cups - Pumpkin white, diced
  • 3 - Potatoes
  • Green beans - 5-6
  • 2 - Carrots
  • 1 -Drumstick
  • 1/2 cup - Colocasia (seppankilangu), diced
  • 1 - Plantain Banana (raw)
  • 2 - Eggplant
  • Curry leaves - a few
  • Salt to taste
  • 3 cups - Fresh Curd
  • 2 tbsp - Coconut oil
  • 1 tsp - Rice flour
  • Turmeric powder - 1 tsp
  • (Vegetables of your choice)
  • For grinding:
  • 1.5 cup - Fresh Coconut
  • 7 - Green chillies
  • 1 tbsp - Poppy seeds.
  • How to Make Simple Avial:

    1. Dice all the vegetables into 2-inch pieces and cook them and keep aside.
    2. Now grind the coconut, green chillies and poppy seeds into a smooth paste.
    3. Combine all the cooked vegetables, ground paste and curd in a large bowl.
    4. Add salt, coconut oil and curry leaves, turmeric powder and rice flour to it and mix well.
    5. You can add a little water if it is too thick.
    6. Cook on a low flame for 10 minutes.
    7. Avial is ready to serve with adai or rice.
