How to Make Simple Carrot Halwa

  • Peel and then grate the carrots.
  • Mix the grated carrots, water, cardamom and saffron in a large pan.
  • Bring the water to the boil and then lower the heat.
  • Cover the pan, and simmer gently for about 1 hour stirring every 10 to 15 mins.
  • Add the milk and sugar and simmer for a further 1 hour on a low heat.
  • Add the butter or ghee, and evaporate the milk on a gentle heat.
  • This usually takes about 15 mins, and at the end you are left with very little liquid in the carrots.
  • Transfer the contents to a serving dish and decorate with the almonds.
  • Serve either hot or cold.
