Ingredients

  • 3-4 nos. brinjals,sliced
  • 1 medium - onion, chopped
  • Tomato paste -3/4 tsp
  • cumin powder -1/2 tsp
  • Methi - 1 tsp
  • Ginger-garlic paste -3/4 tsp
  • Turmeric powder -3/4 tsp
  • Coriander powder - 1 tsp
  • Salt(as per as your taste)
  • 1/2 tsp - chili powder

How to Make Simple eggplant curry

  • Wash the brinjals well, slice and sprinkle some salt.
  • Fry your brinjal well with a little oil.
  • Heat oil in a pan,add ginger-garlic paste,cumin seeds and methi.
  • Add onions and fry till translucent.
  • Add tomato paste , coriander powder, cumin powder,turmeric powder and chilli powder and mix well.
  • Pour 1 cup of water and add 2.5 tsp masala and stir.
  • Add the brinjal ,green peas and salt and cook for about 5-7 mins.
  • Sprinkle some coriander leaves when done.
