Ingredients

  • 1 medium Garlic clove, minced
  • 2 tomatoes, peeled, seeded and chopped
  • 1/2 cup chopped red Onion
  • 1 cup cucumber, peeled, seeded and chopped
  • 1/4 tsp freshly ground black pepper
  • 1 cup Tomato puree
  • 1/2 tsp oil
  • 1 lime, juiced
  • Salt and pepper to taste
  • Sugar
  • Herbs
  • How to Make Simple Gazpacho:

    1. Peel and crush garlic to a smooth paste with a little salt.
    2. Cover tomatoes with boiling water, leave for 30 seconds, then drain, skin and roughly chopped.
    3. Peel and rough chop onion and cucumber.
    4. Remove stalk, seeds and core from pepper, cut into pieces.
    5. Discard crusts and cut bread into pieces.
    6. Place all the prepared ingredients in a bowl with half the tomato juice, tomato puree and oil.
    7. Leave it aside for 10 mins, then liquidize in an electric blender.
    8. Stir in remaining tomato juice, vinegar, lemon juice, sugar and herbs, and season to taste with salt and pepper.
    9. Serve well chilled with accompaniments.
