Ingredients

  • 1 can - Coconut milk.
  • 5 - potatoes.
  • 2 - onions, medium sized ones.
  • 6 - Green chillies (vertically slit ones).
  • curry leaves.
  • 1tsp - Channa dal.
  • 1tsp - ginger.
  • 1 tbsp - Coconut oil.
  • 1 tsp mustard seeds.

How to Make Simple Potato Stew

  • Boil the potatoes and peel the outer skin. Take a deep frying pan or a china dish and season with mustard seeds, channa dal, chillies, ginger and curry leaves in coconut oil.
  • Add the onions and fry till it turns pink in colour.
  • Now add the boiled potatoes and keep frying it.
  • Fry in medium heat for 5 mins.
  • Now add one half of coconut milk, add salt and let it solidify.
  • Now add the remaining coconut milk and leave it for 5-10 mins in medium heat.
  • If needed, add a little coconut oil and remove the coconut stew from heat.
