Ingredients

  • 1 can - Coconut milk.
  • 5 - potatoes.
  • 2 - onions, medium sized ones.
  • 6 - Green chillies (vertically slit ones).
  • curry leaves.
  • 1tsp - Channa dal.
  • 1tsp - ginger.
  • 1 tbsp - Coconut oil.
  • 1 tsp mustard seeds.
  • How to Make Simple Potato Stew:

    1. Boil the potatoes and peel the outer skin. Take a deep frying pan or a china dish and season with mustard seeds, channa dal, chillies, ginger and curry leaves in coconut oil.
    2. Add the onions and fry till it turns pink in colour.
    3. Now add the boiled potatoes and keep frying it.
    4. Fry in medium heat for 5 mins.
    5. Now add one half of coconut milk, add salt and let it solidify.
    6. Now add the remaining coconut milk and leave it for 5-10 mins in medium heat.
    7. If needed, add a little coconut oil and remove the coconut stew from heat.
