Ingredients

  • 1 kg - mutton, cut into curry sized pieces, marinated with ginger & garlic paste for an hour
  • 1 cup - yogurt
  • 1/2 cup - ghee
  • 1 tbsp - ginger paste
  • 1 tbsp - garlic paste
  • 6 cloves
  • 1/4 tsp - cinnamon, broken small
  • 1 tsp - chilli powder
  • 1 tbsp - salt or to taste
  • 2 tsp - garam masala
  • 1 tsp - kewra essence or water

How to Make Simple Rogan Josh

  • Heat the ghee and add the cloves, cinnamon and chilli powder.
  • Add the meat and saute over high heat, till a little opaque.
  • Add the yogurt and continue sauteing over high heat till well mixed.
  • Lower the heat and allow it to simmer covered, till fat separates, stirring occasionally to avoid scorching.
  • Add water to cover the meat well and bring to a boil, then allow it to simmer over low heat, till the meat is tender.
  • Add the salt, garam masala and kewra.
  • Adjust the water according to the consistency you desire, and serve hot.
