Ingredients

  • 1 cup - lettuce, chopped
  • 1 - medium sized carrot, grated
  • 1 - tomato, chopped
  • 1/2 - medium sized cucumber, sliced (You can also add other vegetables like canned sweet corn, radish, bean sprouts, canned Chickpeas or even feta cheese)
  • For the dressing:
  • 2 tsp - Olive oil
  • 1/2 tsp - dried Mint
  • 1 Clove - grated Garlic
  • 1 tsp - Honey
  • 1/2 Lemon - juice
  • Salt - to taste
  • Pepper - to taste
  • How to Make Simple side salad:

    1. Mix all the dressing ingredients together and beat well, with a fork.
    2. Mix all the vegetables in a large bowl. Just before serving, add the dressing and toss it up well.
    3. Goes well with bread and curries.
