How to Make Smoked Kebab

  • Hang yogurt in a muslin cloth to allow excess water to drain.
  • Beat yogurt, then mix it with all the ground ingredients and the mince, and place in an aluminium or steel bowl.
  • Make a well in the centre, place a burning red charcoal in it and dribble ghee over it. Cover the bowl immediately.
  • Leave it for 2 minutes. Remove the charcoal and mix the mince mixture with 4 tbsp of ghee.
  • Flatten it on a greased microwave dish.
  • Microwave for 35 to 40 minutes.
  • When done, let it cool for some time, then cut it into wedges.
  • Garnish with lemon and onion rings.
