  • 1 (10 oz) - packaging of Spinach, very finely chopped
  • 3 tbsps - Oil
  • 2 - medium Onions, very finely chopped
  • 1 inch piece - Ginger, crushed
  • 2 - Green Chillies, finely chopped
  • 5 - cloves Garlic, crushed
  • 2 - large Tomatoes, finely chopped
  • 3/4 tsp - Turmeric Powder
  • 1 tsp - Coriander Powder
  • 1 tsp - Cumin Powder
  • Salt to taste

How to Make Sooki Sai Bhaji

  • Wash the spinach and chop it very finely.
  • In a heavy bottom pot or kadai, heat oil.
  • Add onions and fry until they turn light brown.
  • Add garlic, ginger, green chillies and tomatoes. Stir.
  • Add dry spices. Stir and cook for about 5 minutes.
  • Add chopped spinach and cook for about 5 minutes. Turn heat down, cover, and let spinach cook slowly for about 20 to 30 minutes, stirring a few times in the cooking process.
  • If spinach is watery, increase the heat for a few minutes to thicken. Enjoy with Makki Ki Roti.
