  • 1 (10 oz) - packaging of Spinach, very finely chopped
  • 3 tbsps - Oil
  • 2 - medium Onions, very finely chopped
  • 1 inch piece - Ginger, crushed
  • 2 - Green Chillies, finely chopped
  • 5 - Cloves Garlic, crushed
  • 2 - large Tomatoes, finely chopped
  • 3/4 tsp - Turmeric powder
  • 1 tsp - Coriander Powder
  • 1 tsp - Cumin Powder
  • Salt to taste
  • How to Make Sooki Sai Bhaji:

    1. Wash the spinach and chop it very finely.
    2. In a heavy bottom pot or kadai, heat oil.
    3. Add onions and fry until they turn light brown.
    4. Add garlic, ginger, green chillies and tomatoes. Stir.
    5. Add dry spices. Stir and cook for about 5 minutes.
    6. Add chopped spinach and cook for about 5 minutes. Turn heat down, cover, and let spinach cook slowly for about 20 to 30 minutes, stirring a few times in the cooking process.
    7. If spinach is watery, increase the heat for a few minutes to thicken. Enjoy with Makki Ki Roti.
