Ingredients

  • 1 tsp. shrimp paste
  • 4 fresh red chillies, seeded
  • 1 ½ tsp. salt
  • 1 tsp. Sugar
  • 1 green mango, peeled and shredded
  • Juice of ½ lime

How to Make Sour Mango Sambal

  • In a small heavy pan, dry roast the shrimp paste over a low heat until it is aromatic and crumbly.
  • Alternatively, wrap the block of paste in foil and using a heatproof toasting fork, hold it over a flame for about 20 seconds.
  • Set aside. Using a mortar and pestle or food processor, grind the chillies with the salt to form a paste.
  • Add the shrimp paste and sugar to the mortar or food processor and pound it into the spicy paste until you get a smooth, uniform blend.
  • Transfer this to a small mixing bowl.
  • Toss the shredded mango into the paste and moisten with the lime juice.
  • Mix well until the pieces of fruit have an even coating of flavourings, and serve.
