Soya granules - 1 cup
palak (spinach) - 1 bunch
tomatoes - 2
ginger - 2tsp (minced)
Madras curry powder (hot) - 1 tsp
fennel seeds - 1/2 tsp
fresh cream - 2 tbsp
oil - 2 tbsp
Garam masala - 1/2 tsp
Green chillies - 1 tsp (minced)
Salt to taste
How to Make Soya Palak
Cook soya granules in hot water for 10 minutes. Cover.
When cool, squeeze out water. Set aside.
Chop palak (spinach) roughly after washing the leaves well.
Heat oil in a pan. When hot, add the fennel seeds, minced green chillies and minced ginger. Saute.
Add the Madras curry powder, 1 tbsp fresh cream. Continue stirring.
Add chopped tomatoes. Sprinkle a little water and cook till tomatoes are soft.
Add the soya granules. Stir.
Add salt. Cover. After 5 minutes, add the chopped palak. Stir well.
Sprinkle garam masala and add the balance cream. Stir well and serve hot with rotis or bread.
