How to Make Special Prawn Curry

  • Grind onion, ginger and garlic to a paste. Fry potatoes lightly and set aside.
  • Heat 4 tbsps oil and fry the onion paste to a golden colour.
  • Add the prawns, fry till dry and golden.
  • Put in salt, curds and all the spices with the exception of garam masala, bay leaves and red chillies.
  • Cook till dry. Then pour in the coconut milk and cook over a slow fire till the prawns are half done.
  • Put in the potatoes, sugar and continue cooking till both the prawns and the potatoes are done.
  • Remove from fire and set aside.
  • Heat 2 tbsp oil, toss in the bay leaves and red chillies after pricking them, fry nicely and put over the curry.
  • Sprinkle garam masala and sprigs of coriander leaves on top.
  • Cover and set aside for 5 mins. before serving.
