Ingredients

  • 1.5 cups - Ridge gourd diced big
  • 1.5 cups - Cucumber diced big
  • 1 cup - beans diced medium lengthwise
  • 3/4 cup - Potatoes diced medium
  • 3/4 cup - Carrots diced small
  • 3 tsp - Peanuts
  • 1 cup - tur dal
  • 1 tsp - Tamarind paste
  • 1/2 tsp - Jaggery (optional)
  • For masala:
  • 4- Red Chilli
  • 1 tsp-coriander seeds (dhania)
  • 1/4 tsp- black pepper
  • 1/2 tsp- Urad Dal
  • 4 tsp-grated Coconut
  • How to Make Special Vegetable Kootu:

    1. Fry the masala ingredients, except coconut, till the raw smell goes.
    2. Then grind it to a paste with coconut and pinch of salt.
    3. Pressure cook all the vegetables including peanuts up to 3 whistles max or boil them in a closed pan with 2 tsp salt. Drain them and keep aside.
    4. Pressure cook the tuvar dal as well. You can do this along with vegetables by keeping both in different vessels.
    5. Heat 2 tbsp oil, add 1 tsp mustard seeds, pinch of turmeric and hing, add all vegetables and saute for 2 minutes.
    6. Then add tamarind paste, jaggery with 1/2 cup water and let it boil.
    7. Add the ground paste, then tuvar dal paste and let boil for 5 minutes.
    8. Add required salt and water to desired consistency.
    9. Serve hot with rice.
