  • 1 - large Brinjal
  • 1 - onion, finely chopped
  • 1 - tomato, finely chopped
  • 1tsp - ginger-garlic paste
  • 1tsp - Garam Masala
  • 1tsp - chilli powder
  • 1tsp - ajwain powder
  • 1tsp - coriander powder
  • 3tsp - oil
  • 1tsp - Jeera
  • 1tsp - Lime juice
  • Salt to taste
  • Coriander leaves for garnish
  • How to Make Spicy Baingan Bharta:

    1. Grease the brinjal with oil.
    2. Make 5-6 cuts on the surface with a knife.
    3. Preheat the oven to 375 F and bake the brinjal until it is completely cooked and soft.
    4. The brinjal can also be cooked on the stove in a covered vessel with some oil.
    5. Remember to saute frequently.
    6. Cool the brinjal once cooked.
    7. After it cools, remove the skin and mash it into a pulp.
    8. Heat the oil in a kadai and roast jeera and ginger-garlic paste till fragrant.
    9. Add chopped onions and fry till they become transparent.
    10. Add tomatoes and saute.
    11. Add a little water and cook covered for about 2 mins.
    12. Add the mashed brinjal to the mixture.
    13. Add all the dry masalas and salt and cook till they blend well into the sabzi.
    14. Remove from stove, add the lime juice and mix well.
    15. Garnish with coriander leaves and serve hot with rotis.
