  • 6 hard boiled eggs, shelled and cut into halves
  • 3 onions, chopped finely
  • 2 tomatoes, chopped
  • 1 capsicum, deseeded and chopped (optional)
  • 1 tsp - chopped Garlic
  • 2 tsp - chilli powder
  • 1/2 tsp - Turmeric powder
  • 1 tsp - spice powder or Garam Masala powder
  • 1/2 tsp - Cumins powder
  • salt to taste
  • 2 tbsp - oil
  • 1 sprig Curry leaves (optional)
  • How to Make Spicy Boiled Eggs Masala:

    1. Heat oil in a pan and saute the curry leaves, onions and chopped garlic till the onions turn golden brown.
    2. Add the tomatoes, capsicum and fry till the tomatoes are reduced to pulp.
    3. Add the chilli powder, turmeric powder, cumin powder, spice powder and mix well.
    4. Add salt and 1/2 cup of water and bring to boil.
    5. Lower heat and gently drop in the hard boiled eggs with the yolk side up.
    6. Simmer for a few minutes till the gravy becomes thick.
    7. Serve with rice, bread or chapattis.
