  • 1 cup - skinless chicken, diced
  • Salt to taste
  • 1 tsp - freshly ground black pepper powder
  • 1/2 cup - corn flour
  • Oil for frying
  • 2 tsp - groundnut oil
  • 2 tsp - unsalted cashewnuts/kaju
  • 1 broken red chilli
  • 100g - beans, chopped

How to Make Spicy kaju chicken

  • Mix chicken pieces with salt and pepper.
  • Drop the chicken in the corn-starch and mix well, coating completely.
  • Fry the chicken for 3 min until golden brown.
  • Drain on paper towels.
  • Heat water, add chopped beans and blanch. Drain and keep aside.
  • In a large saute pan, heat the oil, fry the cashews until golden.
  • Add the peppers and blanched beans.
  • Saute for 2 minutes.
  • Remove from the heat.
  • Toss the chicken and cashew mixture together and serve.
