Ingredients

  • 675 g - sausages, cut into 1 inch pieces
  • 1 cup - onion, sliced in thin rounds
  • 1 tbsp - oil
  • 9 baby potatoes or new red potatoes, quartered
  • 1 green capsicum, diced
  • 1/2 tsp - pepper
  • 1/2 tsp - thyme
  • salt to taste
  • 1/2 cup - fresh parsley, chopped

How to Make Spicy Sausage & Potatoes

  • Combine oil, sausages, onions, potatoes, capsicum, salt, pepper and thyme in a heavy bottomed pan, medium.
  • Cover and cook until potatoes are tender.
  • Stir in the remaining ingredients.
  • Stir and cook over medium high heat until potatoes are browned.
  • Lower the heat to cook uncovered until potatoes are crisp-tender.
