Ingredients

  • 675 g - sausages, cut into 1 inch pieces
  • 1 cup - onion, sliced in thin rounds
  • 1 tbsp - oil
  • 9 baby Potatoes or new red Potatoes, quartered
  • 1 green capsicum, diced
  • 1/2 tsp - pepper
  • 1/2 tsp - Thyme
  • salt to taste
  • 1/2 cup - fresh parsley, chopped
  • How to Make Spicy Sausage & Potatoes:

    1. Combine oil, sausages, onions, potatoes, capsicum, salt, pepper and thyme in a heavy bottomed pan, medium.
    2. Cover and cook until potatoes are tender.
    3. Stir in the remaining ingredients.
    4. Stir and cook over medium high heat until potatoes are browned.
    5. Lower the heat to cook uncovered until potatoes are crisp-tender.
