Ingredients

  • 500 g - finely minced lean Mutton
  • 1 tbsp - ground coriander
  • 1 tsp - ground Turmeric
  • 1.5 tsp - ground Ginger
  • 1.5 tsp - ground chillies
  • 1.5 tsp - ground Khus Khus
  • 1 tsp - fine desiccated Coconut
  • 1 pinch of ground Cloves
  • 1 pinch of ground Cinnamon
  • 1 pinch of ground Cardamoms
  • 1 tbsp - besan or ordinary flour
  • salt to taste
  • 100 g - Ghee
  • To saute:
  • 2 - small Onions (finely minced)
  • 2 - Cloves of Garlic (finely minced)
  • a squeeze of Lemon juice.

How to Make Spicy Shami Kababs

  • Make a mixture of all the ingredients.
  • In a stew pan, warm 50 g of ghee and fry lightly the small onions and 2 cloves of garlic, both finely minced.
  • Add to this the above mixture, stir well and cook slowly for 10 to 15 minutes.
  • Turn out, let it cool, and then either pound or grind it into a paste with a squeeze of lemon juice.
  • Form into oval cutlets and fry in the usual way, or press on the metal skewers and grill, basting well.
