Ingredients

  • 4 cups - Sliced Spinach
  • 100 gms - Mixed vegetables like carrots, potatoes, brinjals, Cabbage and French beans
  • 50 gms - Tomatoes
  • 1 - Medium onion, sliced
  • 1 inch piece ginger, minced
  • 3 - Green chillies, minced
  • 1/2 tsp - Turmeric powder
  • 1 tsp - Coriander powder
  • Salt and chilli powder to taste

How to Make Spinach and Vegetable Delight

  • Mix together all the ingredients and put in a pan with 1 cup of water.
  • When all the vegetables are soft, remove from fire and mash coarsely.
  • Reheat and cook till slightly thick.
  • Serve with plain boiled rice.
