Ingredients

  • 250 gms - spinach, chopped
  • 1 cup - shredded Swiss cheese
  • 1/2 cup - grated parmesan cheese
  • 1 cup - milk
  • 1/2 cup - butter
  • 1 cup all-purpose flour
  • 4 eggs
  • 1 tsp - salt

How to Make Spinach Cheese Puffs

  • In a saucepan boil over medium heat the milk, butter and salt.
  • Add the flour and stir until a smooth ball forms.
  • Remove from the heat.
  • Let it stand for five minutes.
  • Add eggs, one at a time, beating well after each addition.
  • Continue beating until the mixture is smooth and shiny.
  • Stir in spinach and cheese.
  • Line baking sheets with foil and grease the foil.
  • Drop batter using a tablespoon 1-1/2 inches apart onto prepared baking sheets.
  • Bake at 375 degrees F for 23 to 28 minutes or until puffed and golden brown.
  • Remove to wire racks to cool. Serve warm.
  • Refrigerate any leftovers.
