Ingredients

  • 250 gms - spinach, chopped
  • 1 cup - shredded Swiss cheese
  • 1/2 cup - grated parmesan cheese
  • 1 cup - Milk
  • 1/2 cup - Butter
  • 1 cup all-purpose flour
  • 4 eggs
  • 1 tsp - salt
  • How to Make Spinach Cheese Puffs:

    1. In a saucepan boil over medium heat the milk, butter and salt.
    2. Add the flour and stir until a smooth ball forms.
    3. Remove from the heat.
    4. Let it stand for five minutes.
    5. Add eggs, one at a time, beating well after each addition.
    6. Continue beating until the mixture is smooth and shiny.
    7. Stir in spinach and cheese.
    8. Line baking sheets with foil and grease the foil.
    9. Drop batter using a tablespoon 1-1/2 inches apart onto prepared baking sheets.
    10. Bake at 375 degrees F for 23 to 28 minutes or until puffed and golden brown.
    11. Remove to wire racks to cool. Serve warm.
    12. Refrigerate any leftovers.
