  • 4 cup - spinach, finely chopped
  • 3 cup - water or vegetable stock
  • 100 g - button mushroom, sliced
  • 1 cup - milk
  • 1/2 cup - cooked sweet corn kernels
  • 2 tbsp - butter
  • 2 tsp - garlic, minced
  • 1 tsp - ginger, minced
  • salt and pepper to taste
  • cream to garnish

How to Make Spinach Mushroom and Corn Soup

  • Heat the butter and fry garlic and ginger till fragrant.
  • Add spinach and mushroom.
  • Stir well and add water or stock.
  • Simmer till the vegetables are cooked.
  • Cool and blend till smooth.
  • Add salt, pepper, milk and corn kernels. Heat thoroughly.
  • Swirl some cream on top and serve hot.
