Ingredients

  • 2 bunches - spring onions/scallions
  • 1 - egg (jumbo size)
  • 3 tbsp - oil
  • 1/4 tsp - mustard seeds
  • 1/2 tsp - cumin seeds
  • Curry leaves, a few
  • 1 tsp - chilli powder
  • Salt to taste

How to Make Spring Onion Egg Fry Poriyal

  • Wash the spring onions thoroughly in warm water. Chop them including the roots and shoots.
  • Heat 1 tbsp oil in a pan. Add mustard seeds, and when they splutter, add cumin seeds and curry leaves.
  • Now, add the chopped onions.
  • Fry for a minute and then add the green shoots.
  • Add salt, chilli powder and saute.
  • Add eggs and fry for 4-5 minutes until it reaches a bhurji consistency.
  • Add oil as you fry. It prevents the egg from sticking to the pan.
  • Remove from fire and serve.
