  • 2 cups- Butternut squash, medium pieces
  • Green gram - 1 cup
  • Coconut - 1/2 cup
  • Garlic - 2 cloves
  • Cumin-1 tsp
  • Chilly powder - 1 tsp
  • Turmeric powder - 1 tsp
  • salt to taste
  • For Seasoning:
  • Oil, mustard seeds, cumin seeds and curry leaves.

How to Make Squash Curry

  • Clean the squash and cut into cubes.
  • Pressure cook green gram and butternut squash with three cups of water for four whistles.
  • Grind coconut with cumin seeds, garlic, chilli powder and turmeric powder to a semi smooth paste. Add it to the squash and simmer for a while.
  • Heat a pan, splutter mustard and cumin seeds. Add to the cooked squash. Mix them well and add the required salt.
  • When the curry starts to boil, add the curry leaves and remove from fire.
