Ingredients

  • 2 cups- Butternut squash, medium pieces
  • Green gram - 1 cup
  • Coconut - 1/2 cup
  • Garlic - 2 Cloves
  • Cumin-1 tsp
  • Chilly powder - 1 tsp
  • Turmeric powder - 1 tsp
  • salt to taste
  • For Seasoning:
  • Oil, mustard seeds, Cumin seeds and curry leaves.
  • How to Make Squash Curry:

    1. Clean the squash and cut into cubes.
    2. Pressure cook green gram and butternut squash with three cups of water for four whistles.
    3. Grind coconut with cumin seeds, garlic, chilli powder and turmeric powder to a semi smooth paste. Add it to the squash and simmer for a while.
    4. Heat a pan, splutter mustard and cumin seeds. Add to the cooked squash. Mix them well and add the required salt.
    5. When the curry starts to boil, add the curry leaves and remove from fire.
