How to Make Srilankan Jack Red Curry

  • Remove the seeds from jack fruit and cut the flesh into thin strips.
  • Combine the fruit with onion, garlic and green chillies.
  • Add rest of the ingredients except the coconut milk.
  • Add about 2 cups of water.
  • Bring to a boil and simmer till the fruit is cooked.
  • Add the coconut milk and simmer for five more minutes.
  • Serve hot with steamed rice.
  • Use under ripe, mature jack fruit for this preparation.
  • Only the fleshy, fruit portion is used in this curry.
  • Traditionally, fresh thick and thin coconut milk is extracted from one grated coconut.
  • The thin milk is used for cooking the jack fruit and the thick milk is added towards the end of the preparation.
  • This recipe is simplified by using packaged thick coconut milk, available in super markets.
