  • jack fruit - 3/4 kg
  • thick Coconut Milk - 200 ml
  • Onion - 1/2 cup, finely chopped
  • Green chillies 2, chopped
  • Garlic - 1/2 tsp, chopped
  • chilli powder - 2 tsp
  • cumin powder - 1 tsp
  • Fennel seed (Saunf) powder - 1 tsp
  • Fenugreek - 1/2 tsp, crushed
  • Turmeric powder - 1/2 tsp
  • curry leaves- few
  • salt to taste
  • How to Make Srilankan Jack Red Curry:

    1. Remove the seeds from jack fruit and cut the flesh into thin strips.
    2. Combine the fruit with onion, garlic and green chillies.
    3. Add rest of the ingredients except the coconut milk.
    4. Add about 2 cups of water.
    5. Bring to a boil and simmer till the fruit is cooked.
    6. Add the coconut milk and simmer for five more minutes.
    7. Serve hot with steamed rice.
    8. Use under ripe, mature jack fruit for this preparation.
    9. Only the fleshy, fruit portion is used in this curry.
    10. Traditionally, fresh thick and thin coconut milk is extracted from one grated coconut.
    11. The thin milk is used for cooking the jack fruit and the thick milk is added towards the end of the preparation.
    12. This recipe is simplified by using packaged thick coconut milk, available in super markets.
