  • 1 cup - Butter
  • 1.5 cups - Breadcrumbs
  • Pinch of salt
  • 3 - eggs
  • 2 cups - Chopped Dates
  • 1/2 cup - Milk
  • Grated rind of one Lemon
  • 1 tsp - Grated Nutmeg
  • How to Make Steamed Date Pudding:

    1. Beat butter and sugar until light and creamy, add one egg at a time and beat well, add rind, nutmeg and salt, then fold in breadcrumbs and dates alternatively with milk.
    2. Make the mixture to a dropping consistency so add a little milk if necessary.
    3. Pour into a well greased mould and put the mould in a pan of hot water and steam the pudding for 2 hours, or until it is cooked.
    4. A skewer inserted in the centre should come out clean.
    5. When the pudding is done invert it on a platter and serve hot with cream or custard sauce.
