How to Make Steamed Date Pudding

  • Beat butter and sugar until light and creamy, add one egg at a time and beat well, add rind, nutmeg and salt, then fold in breadcrumbs and dates alternatively with milk.
  • Make the mixture to a dropping consistency so add a little milk if necessary.
  • Pour into a well greased mould and put the mould in a pan of hot water and steam the pudding for 2 hours, or until it is cooked.
  • A skewer inserted in the centre should come out clean.
  • When the pudding is done invert it on a platter and serve hot with cream or custard sauce.
