Ingredients

  • 1/2 kg - fresh brinjals, cut into medium pieces
  • 2 tbsp - cooking oil
  • 1 tsp - Cumin seeds
  • 1 - large onion, sliced finely
  • 2 tsp - chilli powder
  • 2 - green chillies, finely chopped
  • 1 tsp - minced Garlic
  • 1 tsp - coriander powder
  • 1 tbsp - Vinegar
  • 2 - large tomatoes, chopped
  • salt to taste

How to Make Stir Fry Brinjals

  • Heat the oil in a pan and add the cumin seeds. Fry till they stop sizzling.
  • Add the onion, green chilli and garlic and fry till the onions turn light brown.
  • Add the cut brinjals, chilli powder, coriander powder, salt, vinegar and fry for a while.
  • Finally add tomato and cook for another 2-3 minutes.
  • Serve hot.
