Ingredients

  • 1/2 kg - fresh brinjals, cut into medium pieces
  • 2 tbsp - cooking oil
  • 1 tsp - Cumin seeds
  • 1 - large onion, sliced finely
  • 2 tsp - chilli powder
  • 2 - green chillies, finely chopped
  • 1 tsp - minced Garlic
  • 1 tsp - coriander powder
  • 1 tbsp - Vinegar
  • 2 - large tomatoes, chopped
  • salt to taste
  • How to Make Stir Fry Brinjals:

    1. Heat the oil in a pan and add the cumin seeds. Fry till they stop sizzling.
    2. Add the onion, green chilli and garlic and fry till the onions turn light brown.
    3. Add the cut brinjals, chilli powder, coriander powder, salt, vinegar and fry for a while.
    4. Finally add tomato and cook for another 2-3 minutes.
    5. Serve hot.
