Ingredients

  • 10 - baby eggplants
  • 10 - Green chillies (small size)
  • 1 bunch -coriander (medium)
  • salt
  • 3 - 4 tbsp - oil
  • How to Make Stuffed Baby Eggplant:

    1. Blend the coriander, green chillies and salt into a smooth paste.
    2. Heat the oil in a kadai.
    3. Cut the eggplant from top to the bottom, keeping the stem.
    4. Stuff the paste into each eggplant and add them to the oil.
    5. Fry them until the eggplants are done.
    6. This tastes good with ghee, rice and rotis.
