Ingredients

  • 1/2 kg- medium sized okras
  • 1/4 cup - peeled roasted Peanuts
  • 1 cup - desiccated Coconut
  • 2 - Green chillies
  • 1/2 tbsp - black pepper Corns
  • Salt to taste
  • 1/2 tsp - Turmeric powder
  • 2 - chopped large Onion
  • 1/2 cup - Curry leaves
  • Cooking oil
  • 2 - ripe medium sized Tomatoes
  • 1/4 tsp - cumin powder
  • 1 tbsp - coriander powder
  • 1 tsp - Sugar
  • How to Make Stuffed Bhindi Masala:

    1. Run a knife into each okra from the pointed tip to the stem end.
    2. Dust with salt and turmeric and set aside.
    3. Lightly roast peanuts, coconut and half the finely chopped onion.
    4. Coarsely grind with chillies, cumin powder, pepper corns, turmeric powder, sugar, coriander powder and 1/2 tsp salt.
    5. Taste and add more salt if required.
    6. Heat 4 tbsp oil in a non-stick pan.
    7. Fry tomatoes till soft and add the ground masala.
    8. Fry well for 5-6 mins.
    9. Remove half the mixture and stuff into the okras.
    10. In the pan with the remaining masala, add 1/2 cup water, stir well and immerse okras in it.
    11. Simmer covered for 5 mins or till okras are cooked.
    12. Serve with piping hot rotis/naan.
