Ingredients

  • For dough:
  • 1.5 cups Wheat flour
  • salt to taste
  • water to knead dough
  • For stuffing:
  • 1 medium head broccoli, chopped finely in chopper
  • 2 potatoes, boiled and mashed
  • 2 green chillies, finely chopped
  • 1-inch ginger, finely chopped
  • 1 flake garlic, finely chopped
  • salt to taste
  • 1 tbsp oil
  • How to Make Stuffed Broccoli and potato parathas:

    1. Method for dough:
    2. Mix flour, salt, and water, and knead it into a soft, smooth dough. Keep aside for 15 minutes and knead again if required.
    3. For stuffing:
    4. Heat oil and add ginger, garlic, and chillies and stir.
    5. Add broccoli and stir for 2-3 minutes.
    6. Add salt, mix, and take off fire.
    7. Mix into mashed potatoes. Keep aside to cool a little.
    8. To proceed:
    9. Take a ping-pong-ball-sized dough and shape it round.
    10. Roll into a thick chapati 5-inch in diameter.
    11. Place same sized ball of stuffing in the centre of the chapati.
    12. Cover by lifting chapati from all sides towards centre.
    13. Press lightly, dust with dry flour, and roll into 7-inch diameter rounds.
    14. Heat a griddle and shallow fry each paratha till golden and crisp.
    15. Serve hot with chutney or ketchup.
