Ingredients

  • For dough:
  • 1.5 cups wheat flour
  • salt to taste
  • water to knead dough
  • For stuffing:
  • 1 medium head broccoli, chopped finely in chopper
  • 2 potatoes, boiled and mashed
  • 2 green chillies, finely chopped
  • 1-inch ginger, finely chopped
  • 1 flake garlic, finely chopped
  • salt to taste
  • 1 tbsp oil

How to Make Stuffed Broccoli and potato parathas

  • Method for dough:
  • Mix flour, salt, and water, and knead it into a soft, smooth dough. Keep aside for 15 minutes and knead again if required.
  • For stuffing:
  • Heat oil and add ginger, garlic, and chillies and stir.
  • Add broccoli and stir for 2-3 minutes.
  • Add salt, mix, and take off fire.
  • Mix into mashed potatoes. Keep aside to cool a little.
  • To proceed:
  • Take a ping-pong-ball-sized dough and shape it round.
  • Roll into a thick chapati 5-inch in diameter.
  • Place same sized ball of stuffing in the centre of the chapati.
  • Cover by lifting chapati from all sides towards centre.
  • Press lightly, dust with dry flour, and roll into 7-inch diameter rounds.
  • Heat a griddle and shallow fry each paratha till golden and crisp.
  • Serve hot with chutney or ketchup.
