Ingredients

  • 3 - kiwi
  • 2 cups - all-purpose flour
  • 1 cup - rolled oats
  • 1 cup - yogurt
  • 1 tsp - baking powder
  • 1/2 tsp - baking soda
  • 1/2 cup - oil
  • 1 tbsp - flaxseed meal
  • 1/2 cup - maple syrup
  • How to Make Sugarfree and Eggless Kiwi Muffins:

    1. Preheat the oven to 350 F.
    2. Take the yogurt, oil and maple syrup in a bowl and whisk until everything is well mixed.
    3. Mix the flaxseed meal with 3 tbsp of lukewarm water and keep aside.
    4. Peel the kiwi, chop into chunks and then mash well.
    5. Now mix the flour, rolled oats, baking soda, baking powder and mashed kiwi in an another bowl.
    6. To this, gradually add the whisked mixture and flaxseed meal and mix well.
    7. Pour the batter into muffins moulds and bake them on the middle tray for 20-25 minutes or until a skewer inserted comes out clean.
    8. Once the muffins are cooled, enjoy them guilt-free with a cup of coffee or tea.
