Ingredients

  • 3 - kiwi
  • 2 cups - all-purpose flour
  • 1 cup - rolled oats
  • 1 cup - yogurt
  • 1 tsp - baking powder
  • 1/2 tsp - baking soda
  • 1/2 cup - oil
  • 1 tbsp - flaxseed meal
  • 1/2 cup - maple syrup

How to Make Sugarfree and Eggless Kiwi Muffins

  • Preheat the oven to 350 F.
  • Take the yogurt, oil and maple syrup in a bowl and whisk until everything is well mixed.
  • Mix the flaxseed meal with 3 tbsp of lukewarm water and keep aside.
  • Peel the kiwi, chop into chunks and then mash well.
  • Now mix the flour, rolled oats, baking soda, baking powder and mashed kiwi in an another bowl.
  • To this, gradually add the whisked mixture and flaxseed meal and mix well.
  • Pour the batter into muffins moulds and bake them on the middle tray for 20-25 minutes or until a skewer inserted comes out clean.
  • Once the muffins are cooled, enjoy them guilt-free with a cup of coffee or tea.
