Ingredients

  • 225 gms. new Potatoes
  • 225 gms. young Carrots
  • 225 gms. French beans
  • 1 level tsp. finely chopped fresh marjoram or
  • A pinch of dry marjoram
  • 3 tbsp. French dressing
  • 1 hard boiled egg

How to Make Summer Salad

  • Wash potatoes, cook in boiling salted water until just tender, about 15 minutes.
  • Drain and skin as soon as they are cool enough to handle.
  • Cut into 1 cm dices. Scrape carrots and cut into 1 cm slices.
  • Top and tail beans, cut into short lengths.
  • Place carrots in a saucepan of cold salted water, bring to boil and cook for 5 minutes.
  • Add beans and cook together for a further 10 minutes. Drain.
  • When cold, place all the vegetables in bowl.
  • Mix marjoram into dressing and pour over. Chop egg and sprinkle over salad.
