Ingredients

  • 2.5 cups - flour
  • 150 ml - shortening (fat)
  • 1.5 cups - sugar
  • 3/4 cup - milk
  • 3 eggs
  • 2 tbsp - lemon juice
  • 1 tbsp - grated orange peel
  • 1.5 tsp - grated lemon peel
  • 2.5 tsps - baking powder
  • 3/4 tsp - salt

How to Make Sunshine Cake

  • Combine shortening, orange and lemon peel.
  • Mix well and add sugar.
  • Mix until light and fluffy.
  • Add eggs one by one, beating well after each addition.
  • Sift together flour, baking powder and salt.
  • Add to the creamed mixture alternately with lemon juice and milk.
  • Beat after each addition until smooth.
  • Bake in a paper-lined round pan, in moderate heat at 375 degree F for 25-30 mins till the cake turns yellowish brown.
