Ingredients

  • Long grain Rice - 1 cup
  • Tomato juice - 1 cup
  • Water - 1 cup
  • Peas - 1/2 cup
  • Potato, cut in cubes - 1/2 cup
  • Carrots diced - 1/2 cup
  • Onion - 1 ( large and cut into round rings)
  • Mushrooms (optional) - 1/4 cup (cut into slices )
  • Broccoli - 1/2 cup (cut into florets )
  • Cauliflower - 1/2 cup (cut into florets )
  • Corn kernel -1/2 cup
  • Cardamom (black as well as green ) - 1 tsp
  • Cinnamon - 1 tsp
  • Black peppers - 1 tsp
  • Cloves - 1 tsp
  • Dry fruits - 1/4 cup.
  • 2 tbsp - ghee/butter
  • Salt - to taste
  • Red Chilli powder - according to taste
  • Coriander or Cilantro leaves - 1/4 cup

How to Make Sunshine Rice

  • Soak the rice for 30-45 mins.
  • In a heavy bottom pan, heat ghee and add masalas.
  • Add onion and fry them till they turn golden brown.
  • Add dry fruits and fry for a minute.
  • Add all the vegetables except broccoli.
  • Fry them for a minute or two.
  • Add red chilli powder.
  • Add tomato juice, rice, water and salt.
  • Let it come to a boil, then lower down the gas and let the rice cook .
  • Add broccoli just when rice is about to be done. After rice is almost done, cover the pan with a lid.
  • Open after a few minutes, garnish it with coriander leaves and extra dry fruits if desired.
