Ingredients

  • 3 cups - cooked chicken, roughly chopped
  • 1 tbsp - butter
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1.5 - capsicum, finely chopped
  • 2 sticks - celery, finely sliced
  • 2 tbsp - corn flour
  • 1 tbsp - soya sauce
  • 1 tbsp - brown sugar
  • 1 cup - pineapple juice
  • 1 cup - water
  • 2 chicken stock cubes
  • salt and pepper to taste

How to Make Sweet and Sour Chicken

  • Place butter and vegetables in a 2-litre casserole dish.
  • Cook, covered on high for 4-6 minutes.
  • Blend together corn flour, soya sauce, brown sugar, pineapple juice, water, stock cubes, salt and pepper.
  • Add to the vegetables and cook on medium for 12-14 minutes.
  • Stir in chicken.
  • Heat on high for 1-2 minutes. Serve with rice.
