Ingredients

  • 1/2 can - Sweet Corn
  • 2 - Green chillies
  • 1 sprig - Mint leaves
  • 1 tsp - Coriander leaves
  • 1 slice - Bread
  • 1 cup - plain flour
  • Salt
  • Oil
  • 1/2 tsp Baking soda
  • How to Make Sweet Corn Waffles:

    1. Drain corn, saving the liquid in a vessel.
    2. Transfer drained corn to an electric mixer.
    3. Add green chillies, mint leaves, coriander leaves.
    4. Crush well and add to saved corn liquid.
    5. Run 1 slice of bread in mixie, to make crumbs.
    6. Add to corn mixture.
    7. Add plain flour, salt, 1 tbsp oil, baking soda.
    8. Mix well till no lumps of flour remain.
    9. Heat a greased waffle iron, do not overheat.
    10. Pour a ladleful of mixture in centre, depending on size of iron.
    11. Close and allow to become crisp and golden on both sides.
    12. Serve hot with chutneys or ketchup or even honey.
