  • 1.5 cups - all - purpose flour
  • 1/4 tsp - Turmeric powder
  • 1 cup - sweet potato, cooked and mashed
  • 1/2 cup - whole moong dal, cooked and mashed
  • 3/4 cup - Jaggery
  • 1/4 cup - grated Coconut
  • 1 tsp - Cardamom powder
  • Oil - as required
  • Salt - to taste
  • Flour for dusting
  • How to Make Sweet Potato and Whole Moong Dal Sweet Paratha:

    1. Knead into a smooth dough the all-purpose flour, turmeric powder and salt.
    2. Keep aside for an hour.
    3. Place the jaggery in a pan with quarter cup of water and bring it to a boil.
    4. Strain this jaggery syrup and reheat along with mashed sweet potato, mashed moong dal, cardamom powder and grated coconut.
    5. Cook on a medium flame until the mixture turns thick.
    6. Remove from heat and allow to cool completely.
    7. Make medium sized balls with this filling and keep aside.
    8. Make 10-12 medium sized balls from the dough and roll them out.
    9. Place the filling in the centre of one rolled out paratha and wrap the dough over.
    10. Roll it out again gently.
    11. On a hot tava, roast the paratha on both sides with a few drops of oil.
    12. Serve warm with a cup of coffee or tea.
