Ingredients

  • 8 - Chicken breast fillets
  • 2 tbsp - oil
  • For Tabbouleh stuffing:
  • 1/2 cup - Cracked wheat (bulgur)
  • 1/2 cup - finely chopped Parsley
  • 1/3 cup - finely chopped Mint
  • 4 - shallots, chopped
  • 2 tbsp - oil
  • 2 tbsp - Lemon juice
  • pinch of chilli powder
  • For Tomato sauce:
  • 15 g - Butter
  • 1 - small onion, finely chopped
  • 100 g - Tomatoes
  • 1 tbsp - Tomato paste
  • 1 - Chicken stock cube
  • How to Make Tabbouleh in Chicken Fillets with Tomato Sauce:

    1. For tabbouleh stuffing:
    2. Soak the cracked wheat in boiling water for about 30 mins. Strain and squeeze excess moisture out.
    3. Combine the cracked wheat, parsley, mint and shallots.
    4. Add oil, lemon juice and chilli powder. Mix well.
    5. For tomato sauce:
    6. Saute onion in butter for a few minutes.
    7. Add undrained crushed tomatoes, tomato paste and crumbled stock cube. Simmer uncovered 10 mins.
    8. To prepare the dish:
    9. Cut a packet in the side of each chicken fillet.
    10. Fill it with tabbouleh mixture and close the opening with toothpicks.
    11. Barbeque them, basting frequently with oil.
    12. Serve with tomato sauce.
