Ingredients

  • 8 - Chicken breast fillets
  • 2 tbsp - oil
  • For Tabbouleh stuffing:
  • 1/2 cup - Cracked wheat (bulgur)
  • 1/2 cup - finely chopped Parsley
  • 1/3 cup - finely chopped Mint
  • 4 - shallots, chopped
  • 2 tbsp - oil
  • 2 tbsp - Lemon juice
  • pinch of chilli powder
  • For Tomato sauce:
  • 15 g - Butter
  • 1 - small onion, finely chopped
  • 100 g - Tomatoes
  • 1 tbsp - Tomato paste
  • 1 - Chicken stock cube

How to Make Tabbouleh in Chicken Fillets with Tomato Sauce

  • For tabbouleh stuffing:
  • Soak the cracked wheat in boiling water for about 30 mins. Strain and squeeze excess moisture out.
  • Combine the cracked wheat, parsley, mint and shallots.
  • Add oil, lemon juice and chilli powder. Mix well.
  • For tomato sauce:
  • Saute onion in butter for a few minutes.
  • Add undrained crushed tomatoes, tomato paste and crumbled stock cube. Simmer uncovered 10 mins.
  • To prepare the dish:
  • Cut a packet in the side of each chicken fillet.
  • Fill it with tabbouleh mixture and close the opening with toothpicks.
  • Barbeque them, basting frequently with oil.
  • Serve with tomato sauce.
