  • ½ tsp. sesame or Sunflower oil
  • 2 spring onions, thinly sliced
  • 1 Garlic clove, crushed
  • 600 ml. vegetable stock
  • 425 gms. creamed style Corn
  • 1 tsp. Green chilli paste or chilli sauce (optional)
  • Salt and ground black pepper to taste
  • Few sprigs of coriander leaves, to taste

How to Make Thai Style Corn Soup

  • Heat the oil in a large pan over medium heat.
  • Add the spring onions and garlic and cook for about 1 minute until softened but not browned.
  • Stir in the stock, creamed style corn and chilli paste or sauce, if using.
  • Bring the soup just to the boil, stirring occasionally then remove the pan from the heat.
  • Season the soup to taste and salt and peppers, ladle it into warmed soup bowls.
  • Sprinkle with fresh coriander leaves to garnish and serve immediately.
